Pesto

Pasta of choice

3 cups greens of choice

1/2 cup nuts of choice

2-3 garlic cloves

1/2 cup olive oil

salt and pepper to taste

Optional:

1/4 cup Vegan Parm (follow your heart)

1/4 cup Nutritional yeast

Pick your greens (basil is traditional, but you can also use kale, spinach, mustard greens, or combine). Pick your nut (pine nut is traditional but you can also use walnut or cashew, or combine).

Cook your pasta.

Add greens, nuts, garlic, olive oil, and a little salt and pepper to a blender. If using, add parm and/or nutritional yeast. Blend until creamy and serve over your pasta.

You can also make it in a food processor, by pulsing the greens, nuts, and garlic. When the mixture begins to blend, add the olive oil and parm/nutritional yeast.
