Monster Cookies

I have such fond memories of my Aunt Helen making these delicious cookies for everyone's birthdays. I kind of gave up on them when I went vegan and M+Ms went off my menu. But they're back.

Helen's recipe was for big batches (and then you freeze the rest) but I have pared this down (feel free to multiply it back up).

3 Tablespoons flax seeds

1 cup brown sugar

1 cup raw sugar (or sub white)

1 tsp vanilla

1 tsp corn syrup

2 tsp baking soda

1/4 lb (or 1 stick) vegan butter, melted (or sub canola oil)

3/4 cup peanut butter

4 1/2 cup oats

1/2 cup chocolate chips

1/2 cup Unreal dark chocolate crispy quinoa gems (or other vegan m+ms)

pinch of salt

If using ground flax seeds, mix with 9 Tablespoons of water, whisk with a fork and wait five minutes to let it sit. If using whole flax seeds, mix with 9 Tablespoons of water and use an immersion blender to make gooey.

In a mixing bowl, add the flax seed mixture, then continue to mix in ingredients in the order given. Make into cookie balls (big ones if you truly want Monster Cookies) and place on a sprayed pan. Bake at 350 for 10-12 minutes.
