Grilled PBJ

Sure, it sounds weird if you’ve never had one. But so did combining chocolate and peanut butter before someone had a glorious idea.

A good bread is key here. Again, I’ll plug Mom’s Homemade Bread or a good option from the bakery section at your grocery store (or bakery).

Slice your bread fairly thick. Spread plant-based butter on the outside of both pieces. Then stack so the two buttered halves are on top of each other. Spread a good natural chunky peanut butter (or find your weaker option) and some great jam (my mom makes the best jam, so I’m spoiled).

Heat a skilled or griddle. Place a buttered half (the slice with the peanut butter and jelly) onto the skillet and top with the other slice, so the buttered sides are on the outside the sandwich. Use a grill press, or a pan lid, or another pan, or just hold down a spatula to press the sandwich down while it cooks. Flip when one side is browned and brown the other.

Cut in a diagonal, because it looks better that way.
