Dorito Salad
1 pkg Beyond or Impossible ground beef (or you can crumble Beyond burgers)
1 can of black beans
1 pkg taco seasoning
1/2 head iceberg lettuce, chopped
salsa
guacamole
vegan sour cream
vegan cheese shreds
cherry tomatoes, halved
Catalina (or other French) Dressing
Spicy Sweet Chili Doritos
Cook vegan ground beef in a skillet and heat black beans in a pan. When the beef is browned, add 1/2 of the taco seasoning packet and a half cup of water and cook while the water starts to evaporate, but turn off the burner soon to keep moist. Dump the other half of the packet in with the beans.
Chop the lettuce and place in individual bowls. Everyone places the options they want on top of their lettuce: vegan beef, beans, salsa, guac, sour cream, cheese, cherry tomatoes.
Then drizzle some Catalina dressing and crumble some of the Doritos on top.
