Alfredo

1 box pasta of choice

1 pkg silken tofu
2 C. unsweetened soy milk
1/4 C. nutritional yeast
1/4 C. raw cashews
1 T. onion powder
1/2 t. garlic powder
3/4 t. sea salt
1/2 t. white pepper
1 white onion
1 T each of fresh chopped parsley, thyme, and basil
1/4 C water
1/4 C white cooking wine
1/4 C. whole wheat flour

1 head of broccoli

1/2 cup frozen peas


Cook pasta

Blend all from tofu to pepper until smooth. Saute onion with the herbs and water until liquid has evaporated but don't brown onion. Pour in wine and swirl until sizzling, then whisk blended ingredients into pan. Once bubbling, gradually add flour and whisk until thick.

Steam broccoli until almost tender, then add peas and cook until thawed and hot.

Dish pasta in bowls, add broccoli and peas, and ladle sauce on top.
